Oil that is labeled “first press” means that the olives were only crushed and pressed one time. “Cold pressed” means that there was no heat added during the pressing process. Keeping the olives cool maximizes the quality of the oil that is produced. Any olive oil that is labeled extra virgin is a first cold pressing olive oil.
